I recently visited their Biggest Dimsum festival where in I was fortunate to taste their lovely range of dimsums, dumplings and Baos.

The cucumber sorbet or the mouth fresher before the starters

Wonton(Prawn and chives dimsums): Served in soya sauce based gravy with a light sour tone and topped with crispy caramelized garlic tangy, these dimsums will blow you over with their lusciousness.

Jiaozi (Chicken gyoza dimsums): Ahh the crisp exterior and the fine flavourful chicken mince of these pan seared dimsums! Not to forget the subtle texture of the dimsums, the crunchy caramelized garlic and of course the chopped spring onions providing their freshness.

Crystal dumplings: Whenever I had pakchoy leaves, they were put in the mixture as it is, this resulting in no finesse. But here the pakchoy leaves are finely chopped and go so well with the minced chicken to the point of absolute deliciousness. And to top it all, the dimsum skin is not too chewy like the ones of usual crystal dimsums.

Korean Chicken Bao: Talk about explosion of flavours and these Baos do justice to this phrase. The skin is fluffy, soft, sweet & slightly sour with the inside mixture of chicken lending a very hot & spicy flavour with sweet undertones.

Cheung Fun (prawn & chives): The inside crispy layer under the mellow rice paper skin is the trailer to a delicious film of minced chicken underneath.  You have to pour soy sauce based dip on it to enjoy it’s savouriness. Not to forget the chopped spring onions, bell peppers and the caramelized garlic.

Glutinous rice: Too good, melt in the mouth, and the tenderness of minced pork blows you over.

Xia long bao chicken dimsums: I shall call them soupy dimsums with a classy subtlety.

Lao Mai Gai: Hot and spicy rice with chicken and juicy mushrooms and wrapped in lotus leaf and steamed to perfection.

Yaki Udon noodles: Slurpy and sweet with fresh and crunchy vegetables.

A hard core non vegetarian can, on some days, relish an all vegetarian menu with the dominance of vegan specialities. Yes folks, I did the sin of this unusual gluttony and enjoyed every bit of it.

Kiara is focussing majorly on healthy meals which are calorie counted by a nutritionist and whose ingredients are sourced from organic farms. The chefs are not using an artificial flavours i.e. no ajinomoto and no MSG. All their sauces and gravies are prepared in house with the freshest ingredients and while tasting their delicacies, you can gauge that.

Assorted breads with hummus: More than the breads, I would like to talk about the three flavours of hummus here. The olive based regular hummus was good with a fresh grainy texture and slight hints of roasted cumin. The fennel based one is an innovative take on regular hummus with the humble hints of fennel powder and leaves. The last one was the apple and walnut hummus with zata’ar powder in it. The sweetness of apple perfectly compliments the grainy texture of crushed walnuts. The breads, particularly focassia and multi grain bun, could have been better although the pita bread deserves full praise. RECOMMENDED.

Quinoa and kale salad: This simple yet flavourful salad combines two super foods – quinoa and kale leaves. Full marks to the plating style – the salad is carefully placed in a glass bowl and adorned with broccoli in the flower petal style. The texture of the salad is crunchy due to the presence of onion and purple cabbage with the chewy softness of quinoa. The chilli dip with which the salad is served is one of a kind – silky texture with the goodness of sesame seeds and coconut milk. HIGHLY RECOMMENDED.

Indonesian Minestrone soup: The soulful flavours of tomatoes, barley, coconut milk and sriracha sauce (made in house) made into a “shorba” style soup with the added benefits of mellow zucchini and mushroom. This soup is healthy and has a lovely creamy texture. HIGHLY RECOMMENDED.

Basil and bean broth: Boiled beans along with finely chopped bell peppers and basil drenched in a light watery broth fashioned from dehydrated mushrooms and soya is your go to dish when you wish to have some thing light and healthy. And let us not forget the slight tangy hints in every drop. RECOMMENDED.

Pokchoy Dumplings: A creamy mixture of chopped water chestnuts, mushrooms and carrots enclosed by a tiny pokchoy leaf and steamed to mellow perfection – I kept on gobbling and did not stop till seven. HIGHLY RECOMMENDED.

Shakarkandi and kadoo kebab: A very unusual or rather scary combination – sweet potato and pumpkin prepared into a tender kebab served with tamarind chutney. The kebabs are luscious and the sweetness of sweet potatoes provide a different dimension to these kebabs. RECOMMENDED.

Bao bhaajhi: The progressive Asian theme of this restaurant blossoms well in the bhaajhi – chopped zucchini, mushrooms and tomatoes in a lemon butter compote and served with three different baos – soft and sour steamed ones, baked ones and crispy baked one. RECOMMENDED.

Black rice with paneer: Yes, Himalayan black rice with sweet corn, broccoli and paneer could be this good and appetizing. The rice is moist and has an adorable chewy texture which is hard to forget. HIGHLY RECOMMENDED.

Thai Green Curry: That a Thai green curry can taste so flavourful even without the fish sauce speaks volumes about the skill of the chef here. The usual spicy and creamy texture is there and those firm vegetables as well. HIGHLY RECOMMENDED.

Assorted kulfis: These kulfis denote the three prominent flavours of Asia – coffee from Indonesia, lemongrass from Malaysia and paan/betel from India. The usual bitter warm texture can be expected from the coffee kulfi and the palate refreshing flavours from the betel one (raw betel leaves used) but the subtle impression of lemongrass kulfi topped with sesame seeds is the one that will leave you flabbergasted. HIGHLY RECOMMENDED.

The Junction, Hauz Khas, New Delhi

This new property in Delhi is actually a junction of multiple cuisine trains. Spread across a huge area with different sections, this one boasts of a distinct sushi and dimsums bar, The Big Baker with a lovely assortment of desserts, a pizzeria, an outdoor seating area under the shade of trees (full marks for that) and indoor fine dine area. The Junction redefines the word multi-cuisine for you by serving multiple cuisines from all the courses. Here are a few of them that I recently tasted:

Veg pizza: The thinnest crust with a lovely succulency and the chewiness and juiciness of yellow and green zucchinis should not be missed. HIGHLY RECOMMENDED.

Chicken dimsums: The exceptionally thin exterior is attractive but the extremely tangy flavour of the mine chicken mince is not acceptable.

Mushroom wantons: I usually avoid wantons because they are deep fried but I could not keep my hands off this one. The finely chopped mushrooms were enveloped in a chewy exterior whichw as fried to crispy perfection. HIGHLY RECOMMENDED.

California roll: Their sushis are a must try and this one was a burst of subtle flavours – sweet, tangy and piquant. HIGHLY RECOMMENDED.

Mac n cheese: Ahh, the gooey cheese works its magic again! The al dante macaroni drenched in warm parmesan with bits of chicken is one dish which you would not want to miss! HIGHLY RECOMMENDED.

Veg mezze platter: I have never ever tasted a mezze platter like this one! For the first time, the pita breads were slathered with butter and were soft yet crispy – the characteristic brittleness was absent here. Additionally, the beetroot flavoured dip was ohh-so-delicious! HIGHLY RECOMMENDED.

Prawn dimsums: If you leave the intense watery aroma of prawns aside, the these dimsums are heavenly! The skin and the filling are perfect and better than the chicken ones here.

Chicken and cashewnut dumplings: Who could have thought that the nuttiness and crunchiness of the cashewnuts could be used to innovate the usual chicken dimsums? These guys did and it turned out excellent! And the form of these lovelies are way too attractive. HIGHLY RECOMMENDED.

Factory by Sutra, Sector 29, Gurgaon

In this age of cut throat competition in the food industry, the latest trend to emerge is the emergence of themed based restaurants. Sometimes you are disappointed by the themes and sometimes you are baffled by the dexterity with which the décor and the dishes are done.

Factory by Sutra is a microbrewery situated in sector 29, Gurgaon. The unplastered walls, the over hanging ropes, portraits of the 20th century factory workers and the round plates of factory workers justify the theme of this huge resto-bar.

Moving on to the items I tried :

Natwarlol : A lovely mocktail made up of crushed and strained pomegranates and apples and chaat masala, this is a must try if you love fresh and sweet flavours of fruits with the zingy flavour of chaat masala.

Kurkuri bhindi : A very innovative dish, I must say. Fine julliennes of lady finger or okra fried in gram flour and served with tartar sauce. The okra jullienes are way too crispy but some were quite thin and hence were a but burnt.

Delhi 6 : Our usual paani poori is well innovated here with the filling of another staple of India – bhel poori. Eat it and there is an explosion of so many flavours. The gol gappas are light, thin and airy; the bhel poori is crunchy, sweet and tangy and the sev in the bhel has a very fine quality. RECOMMENDED.

Chilli chicken pita pocket : Served with a sweet chilli sauce, this is an innovative fusion of the Bao and the pita pockets. The soft baos are shaped into pita pockets and filled with a lovely filling of chilli chicken. The small chunks of chicken were sweet as well as spicy in flavour and were ohhh-so-soft soft and chewy. Each and every bite was redolent with flavours. The sweetness of finely chopped onions and bell peppers was so prominent here that you will go gaga over it. I wish it was served with a different sauce as the served sauce had the same flavour as the pita filling.

Chicken dimsums : These will definitely transfer you into a long food coma. Topped with red chilli ppoweder and chopped coriander, the dimsums had a moist, soft and thin skin with a filling of finely minced chewy chicken. The dip served with these was way too hot and spicy – made up with milk, red chilli sauce, schezwan sauce and chicken broth. RECOMMENDED.

Laal maas pao : The fusion gets better here. This dish has the softest buns or paos you will ever taste – well buttered and not crumbling into chunks. The laal maas was exemplary – topped with the finest julliennes of ginger which gave their characteristic pungent flavour. The mutton was ohh-so-succulent and chewy and the gravy was spicy and thick. RECOMMENDED.

Fish in lemon butter sauce : The fish could have been grilled more as it was disintegrating and lacked a fine crust which is a characteristic of such dishes. The sauce was thick, had the lovely amalgamation of chopped garlic and parsley, but a bit salty and could have been thicker. Since lemon was squeezed over the fish, the saltiness in the sauce was enhanced.

Chocolate rum balls : What a dessert! The usual rum filled chocolate balls were mashed and the thick mixture was made into balls and coated with thick dark chocolate syrup and topped with white chocolate shavings. The balls were melt in the mouth, soft, gooey and had a bitter sweet taste. RECOMMENDED.
