Cooking blunders

Yesterday, I was able to correct a cooking blunder and although I do not feel like a superhero, I feel it is worthwhile to share my experience:
I usually add dried mushroom powder to sautéed vegetables to get that roasted umami flavour. But yesterday, while sprinkling the shiitake mushroom powder, a few tablespoons were accidentally thrown in because of a slight twist of my palm. And too much of that subtle umami flavour can make a dish excessively bitter. So, to balance the flavours, I added my vegan mayonnaise and Dijon mustard. The dish became creamier and did not taste the blunder I was expecting.
