Khatti Meethi Mango Chutney

Ingredients

4 raw mangoes

3 red chillies

Oil

1-1.5 tblspn sugar

Salt

1/10 tsp Fennel Seeds

1/10 tsp Cumin Seeds

1/10 tsp Onion Seeds

1/10 tsp Mustard Seeds

1/10 tsp Fenugreek seeds

1 cup water

Steps:

  1. Wash the raw mangoes, peel the outer layer and cut one mango into 4 pieces
  2. Saute these pieces in a little bit of oil till the mangoes become soft
  3. In a kadhai/saucepan, add a little bit of oil. When the oil heats up add fennel seeds(sauff), cumin seeds(jeera), onion seeds(kalonji), mustard seeds(rye) and fenugreek seeds(methi). All of this be should be in equal quantity and the total mixture should add upto 1/2 tsp. (Which means that individual seeds should be 1/10 tsp)
  4. After all the seeds pop, break the red chillies and add them to the above mixture
  5. Add 1 cup of water
  6. Add 1-1.5 tablespoon sugar to the water and add 1/3 tsp salt to the mixture. You can add the sugar later also as per your taste
  7. Boil this mixture for sometime till the sugar melts and the mixture reaches a slightly thicker consistency
  8. Now add the chopped mangoes to this and keep cooking till the mangoes can be cut with a spoon. The level of gravy should be at the level of mangoes. The gravy should not be too much that the mangoes are completely submerged nor it should be too less that the mangoes are visible over the gravy. The same amount of gravy and mangoes in the bowl in the above picture should be there in your saucepan
  9. Taste the salt and sugar and add more as per your taste and its done!
